Valentines Day Pancakes

INGREDIENTS:
1 cup cassava flour
1 tbsp cane sugar (adjust per your desired sweetness level)
2 eggs
1 cup Unsweetened Vanilla Almond Milk (adjust to your desired consistency)
1 tsp vanilla extract
1/2 tsp baking soda
1 tsp cinnamon
dash of Himalayan salt
Maple syrup (for topping)
1 tbsp coconut oil for cooking (use more as it depletes during cooking)

DIRECTIONS:
1. Heat up a skillet
2. while the skillet is heating whisk all the ingredients together in a bowl.
3. Once the skillet is hot, put in a 1 tbsp of coconut oil.
4. Once the coconut oil is melted, pour about 1/2 cup of the pancake mixture into the skillet. Let the pancake cook for about 3 minutes (also depends on the temperature of your stove) and then flip and cook on the other side.
5. Pancakes should be golden brown on each side
