INGREDIENTS:
- 3-4 cups shredded chicken from the homemade bone broth
- 2 tbsp coconut oil
- 1 can fire roasted crushed tomatoes (14.5 oz can)
- 1 red bell pepper, thinly sliced and chopped
- 1 green bell pepper, thinly sliced and chopped
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 4 cups homemade bone broth
- 1 tbsp cumin
- 1 tbsp chili powder
- 1 tsp oregano
- 1/2 tsp smoked paprika
- 1/2 tsp sea salt
- 1/2 tsp ground pepper
- Sprinkle of cayenne pepper (optional)
For garnish:
- 1 avocado
- fresh cilantro
DIRECTIONS:
1. Make the bone broth in a crock pot. Follow instructions here
2. Once bone broth is finished, pull the chicken out and let it cool before shredding it with your fingers
3. Heat a soup pot over medium high heat. Add coconut oil to the pot and let melt
4. Once coconut oil has melted, add the sliced onion and sautee until the onion is transparent
5. Add the minced garlic to the onion and sautee, stirring frequently until fragrant
6. Add the cumin, chili powder, oregano, smoked paprika, salt, pepper and stir frequently until super fragrant
7. Add the red and green peppers and sautee for about 5 minutes
8. Add the 4 cups of bone broth, the crushed tomatoes and the chicken
9. Let simmer for about 15 minutes
10. Add more salt, pepper, cayenne pepper (optional) to your desired taste
11. Serve with fresh cilantro and avocado! Enjoy!!
