I have to admit, I don't normally like Kale. It's tough to chew - making my jaw super sore and the flavor is so bitter! But let me tell you something, this recipe takes all of that away! And not only that, it actually ADDS flavor to the kale! Say wha?!!  It's also easy to make and goes with almost everything! I like to have it with eggs, chicken or fish! Or heck, even on it's own! So go ahead, give it a try and let me know what you think in the comments! 

Ingredients:
1 large bunch of kale, stemmed and leaves coarsely ripped/chopped
3 garlic cloves, peeled and minced
2 tbsp coconut oil
1/2 a sweet onion, finely diced
1/4 cup chicken or veggie broth (optional)
2 tbsp pure balsamic vinegar
Salt and freshly ground pepper to taste
Sprinkle of pine nuts (optional for topping)
Sprinkle of shaved Parmesan cheese (optional for topping)

Directions: 
1. Heat coconut oil in a large sauté pan set over medium-high heat until it mets. Add onions and cook until translucent. Next add the garlic, and cook until soft - try not to burn it!
2. Add kale to the pan, turn the heat to high and add the stock. Use a spoon to toss the greens in the oil and stock (if using), then cover and cook for approximately 5 to 7 minutes, until it is soft and wilted, but still quite green. Remove cover and continue to cook, stirring occasionally until all the liquid has evaporated (if using stock), another 1 to 2 minutes. Season to taste with salt and peppers, add vinegar and toss to combine.
3. Top with pine nuts and Parmesan cheese, if desired
